Should you cover concrete with plastic in cold weather?

In bad weather conditions like rain, hail or snow it can be concrete works will need to ‘protect’ either freshly poured concrete, or concrete going through it’s curing phase. Care must be taken however as plastic sheeting if laid directly on top, can actually discolour the concrete permanently.
